THE DEPTH OF TIME
Umbela Añejo is the result of 18 months of patient waiting in first-fill French oak barrels. In that time, Jalisco agave becomes something greater: a spirit of great complexity, with aromatic layers that reveal themselves slowly and a finish that stays long on the palate. It cannot be rushed.
PROCESO
Eighteen months in 200-liter first-fill French oak barrels. The porosity of French oak allows a slower micro-oxidation than American oak, developing more complex aromas and the silky texture that defines a great añejo. Every barrel is evaluated individually before it is approved for blending.
