WHEN THE AGAVE BLOOMS
Blue agave matures for 5 to 7 years in the Amatitán Valley. When it reaches its precise point, it produces the umbel — its inflorescence — the unmistakable sign that its sugars have peaked. At that moment, and not before, we harvest it by hand.
From that instant, every decision serves a single purpose: that the character of the agave reaches your glass intact. No shortcuts. No additives. No artificial corrections. Only agave, fire, water and time.
PROCESS
The selected piñas are roasted for 36 hours in a traditional brick oven — the slowest method, which turns the agave starches into fermentable sugars with aromatic notes no industrial autoclave can replicate. The must ferments naturally with the ambient yeasts of our distillery in Amatitán, for 5 days in open vats. Two distillations in copper pot stills purify and soften the spirit. The result is bottled directly — unaged, with no additives whatsoever.
